Life on the Hill asks readers to share their favorite simple, summertime recipe. Here, Jen Shimalla of Uptown Deli dishes on one of her specialties.

Jen’s Crispy Tilapia
“It’s so light and refreshing, plus it’s healthy and the kids eat it.”

Ingredients:
-tilapia filets (1-2 per person, depending on size of filets)
-Pam cooking spray or olive oil
-salt, pepper, garlic powder, lemon seasoning (such as Mrs. Dash), and parsley (optional,  to taste)
-fresh lemon (if desired)
-shredded parmesan cheese

Directions:
1. Preheat oven to 350.
2. Season each filet on both sides with desired amount of salt, pepper, and seasonings.
3. Coat frying pan with Pam or olive oil and quickly pan fry both sides of each filet.
4. Bake filets in the oven for about 20 minutes (or, if you prefer drier fish, add 5 minutes).
5. Add shredded parmesan cheese over top of the filets in the last few minutes of baking, and let the cheese brown.
6. Remove fish from oven and add fresh lemon to taste.
7. Enjoy!
